Can we please have access to editing our post titles?

If you click "Go Advanced" when editing a message it should give you that option

If the thread has been viewed, that only changes the title INSIDE the post but not the one displayed in the Forum.

well thats all you get, I can't tweak the permissions anymore

only moderators/admins can make long term changes to topics
