...
are you on mac or pc?
for mac, this free program 'audio recorder' is the bomb. i won't use anything else:
http://www.versiontracker.com/dyn/moreinfo/macosx/17392
it is super lightweight so it won't slow down serato [not a prob if your on the cdjs], extremely simple, & free.
if you are on pc [or just about any platform actually] you can get audacity for free:
http://audacity.sourceforge.net/
or a more full featured pc option would be adobe audition [they bought cool edit pro and re-branded it, tons of videos on how to use it on youtube....also free if you have bitorrent ;) ]
http://www.adobe.com/products/audition/
i'm not sure how the two pc suggestions would impact serato as i use a macbook, but again if you are using cdjs it is irrelevant.

I use Sony Soundforge for all of my stuff. It allows ya to monitor your levels pretty closely and does a great job and filtering out noise and normalizing when it's in post production.
I have Audacity on my Linux box but never really used it so can't really say much about it.
